Step 1: Harvest Fresh Moringa Leaves
Start by picking 4-5 small branches from your moringa tree. If you don't have access to fresh moringa, you can use moringa powder. Simply add it directly to the flour, possibly adjusting the liquid ingredients to maintain the right moisture level.
Step 2: Remove the Leaves
Strip the leaves from the main stems by running your hand down the length of the stem. Don't worry about smaller stems, as they will blend well when making the puree.
Step 3: Wash & Puree the Moringa Leaves
Wash the moringa leaves thoroughly. Place them in a blender or food processor, adding about 3/4 cup of water to aid in blending. Puree until smooth, adjusting water as needed to achieve the desired consistency. Aim for about 1 cup of puree for this recipe.
Step 4: Prepare Your Dough with Moringa powder
Measure out 400g of gluten-free flour using a digital kitchen scale. For this recipe, Gluten-Free Baking Flour works perfectly. Measure and add 2 Tablespoons of Moringa Powder.
Step 5: Add Eggs & Moringa Puree
Mix 3 eggs and the moringa puree into the flour mixture. Depending on the moisture from the puree, you might need to add an extra egg. For this recipe, 4 eggs were used. Combine until a dough forms.
Step 6: Gently Knead the Dough
Knead the dough on a clean surface until all the flour is incorporated and a smooth ball forms. Adjust the dough with extra flour or water to ensure it is not too sticky or dry.
Step 7: Divide Dough & Use a Pasta Maker
Divide the dough into smaller sections. Use a pasta maker set to the widest setting, gradually reducing the size to achieve the desired thickness. If the dough is too moist, dust with gluten-free flour before each pass.
Step 8: Cut the Moringa Noodles
Attach the noodle cutting accessory to your pasta machine. Run the sheets of dough through to cut them into noodles. You can also roll the dough thin and cut it by hand if you prefer.
Step 9: Store Homemade Gluten-Free Moringa Noodles
Choose to cook, freeze, or dry your noodles for later use. Cook them by adding to boiling water; they are ready when they float to the top. To freeze, lay them on parchment-lined sheets, freeze until solid, then store in bags or containers for up to 6 months. To dry, leave them out until crispy, or use a dehydrator.
